Ramen Noodle Stir Fry with Vegetables

Easy, Cheap, and Delicious!

Ingredients:

  • 1 T. olive oil
  • 20-oz bag frozen stir-fry vegetables
  • 3 packages chicken-flavor ramen
  • 4 T. low-sodium soy sauce
  • 4 T. water

Directions:

  1. Heat oil in a large skillet over medium heat. Add vegetables and cook for 7-8 minutes, or until they start to turn golden brown around the edges.
  2. Bring a medium-sized pot of water to boil. When water has reached a rolling boil, add the ramen noodles. Boil for 3-4 minutes, then drain.
  3. Add the cooked ramen to the skillet and add in one of the ramen seasoning packets, soy sauce and water. Stir and let cook together for 3 minutes. Serve and enjoy!

Yield: 4 servings
